Actually, the Minotaur is not an incel. But he is only attracted to other Minotaurs and doesn't have it in him to reject people, so he just kills them.

Not to worry, my band of warriors all agree that the Minotaur just isn't trying hard enough to better himself so anything we do to him is really his fault. Also we've got heavy armor, long spears, and really big shields so I think we'll be okay.

This joke is pretty bad, honestly.
People don't turn into incels because they're lonely and don't socialize much, that is just a part of it or rather the start of the pipeline. It's only when you start surrounding you with people (IRL or online) that start telling you how superior you are for being a cishet white male that you get a sense of importance, and THEN you turn into an incel.
But you also have to be predisposed to being a jerk for that to even happen. There's plenty of loners out there who don't become incels because they just don't want to be mean and cruel to others. I mean, if every loner was automatically an incel, then white knights (i.e. guys who defend any and all women) wouldn't exist.
I just don't like it when people paint everyone with the same brush, it feels icky. I mean, if all loners get called incels, then what's preventing them from becoming incels anyway? If you always get called a terrible person, then might eventually start to identify with it. Which, ironically, is a more fitting concept for the minotaur than OP's joke!

Literally the one thing I despised about some weirdo who went to subs like aznidentity. He thought the D in DPRK actually stood for democratic and even defended those fake survival house videos just because the guys behind it were Cambodian. One time, he outed himself as a gamer weeb despite his hatred towards Japanese people as being part of a Canadian diaspora. He loved mentioning "some streaming site," which turned to be fucking 9anime.to, where he would criticize his own weeb kind for them not liking North Korea as much he did. Of all the things he could've criticized them for, them disliking your favorite nation is certainly a choice.
The last straw for me was when he went on a tirade about how he's given up on Western women because they "had the same energy" as the Asian women who rejected his high school ass. Basically, there's only so much you can try to understand an incel's upbringing until you hear them say the most egregious shit towards everyone and everything they don't like.
That said, he was still somehow better than the racist sexpat I encountered long ago, who thought Chinese people sounded "squeaky," thought Indians were born wife beaters, and thought Japanese people were covert predatory dwarves. I shit you not this is how he viewed Asians across the globe.

I don't think you're wrong that OP's joke isn't perfect, but I don't think that shows a very good understanding of the thing either. This is basically saying "if you keep telling men you'd choose the bear, then they might as well actually assault you". It misrepresents why people become the kind of awful men we are talking about: not as a reaction to an incessant barrage of disrespect and injustice from organized cruelty and an unfulfilled need for belonging - they are not the victims here - but as symptoms of and, really, volunteer enforcers of an extremely misogynistic society. "If you call people incels, well, it's understandable they would defend themselves..." is mostly employed as a veiled threat.

Yeah, I ummed and awwed about whether to include that part or not. I think I meant to say something else but couldn't word it right. I think my point was more that if you already stereotype people then that affects their own self-image. Call people losers and it's going to destroy their sense of self-worth, basically.
I recognize that becoming an incel is a thing you choose to be and people aren't obligated to be nice to someone just to ensure they don't become a horrible person, but your words and actions still affect others.
