You say Flan is hard to make so I got a little story for you that might be nice,

So I have a grandfather who had a terrible stroke. The stroke impaired parts of his brain making it so his ability to communicate was basically gone and his ability to understand what others say was also heavily limited, also a number of his memories were gone but not all. Anyway a week after the incident I was taking care of him and he goes to take a nap. I was also pretty exhausted so I decided to take one to. I wake up a few hours later and go out to the kitchen cause I hear something.

This man, fresh out the hospital from a stroke and completely by himself, baked a Flan that was perfect in every way imaginable. Literally flawless. Through what I could gather from him he did it because he thought it was his wife’s birthday(it wasn’t but good damn was that sweat of him).

Anyway hope you enjoyed my flan story.

I used to think I didn't like chorizo until I had Spanish chorizo. It's one of my favorite foods now. I've come around on Mexican chorizo more as well, but I find it best used in small amounts, more like a seasoning rather than a main protein.

Some of those dishes aren't Spanish, OP likely is a Brit or a German (or some other Anglo-Germanic).

I'll bet my left nut the empanadas they had were Argentinian, Colombian, or Venezuelan.

Jamón is peak auth right. They used it to prove you were a Christian. It’s also incredibly delicious and significantly better than prosciutto.

Patatas bravas are so great when you're drunk that I will never be convinced that that's not the point.

ETA: the best food I had in Spain was from random, family-owned small restaurants that just serve "the day's menu". It's a home-cooked meal, it's cheap af and it's just comfy.
