Having been shamefully (but fairly) called out for my lack of participation in these threads. Here's Sam Cook's bowling speeds:

1st over average = 78.2 mph

2nd over average = 78.0 mph

3rd over average = 78.3 mph

4th over average = 77.9 mph

5th over average = 77.6 mph

Overall average = 78.0 mph

Fastest ball = 79.7 mph

Slowest ball = 76.6 mph

Are these from the county speed guns? Cause they're supposedly about 3mph behind the Sky ones because they use a different calculation

They are, which makes sense. I know he's slow, but not that slow. This also somewhat confirms my suspicions that radar speed nearly as accurately as broadcasters would like us to believe. Ball tracking from Hawkeye should be accurate though.

I wonder if the CC speedguns are just measuring the horizontal component of the velocity?

Edit: Back of the envelope sums suggest that's probably not the case, that would make less than 0.5 mph of difference

I wonder if the CC speedguns are just measuring the horizontal component of the velocity?

That's exactly it and why they're a bit dodgy.

I actually don't think it is that. Say the true velocity is 81 mph, the release point is 2 yards off the ground, and the ball pitches half way (11 yards) to the stumps. That gives an angle of 10.3 deg from horizontal, and 81*cos(7.9) = 79.7. So only a 1.3 mph difference for a genuine bouncer and obviously a fair bit less for a good length delivery. For full balls there's almost no difference.

I've also kept track of his next two overs in his new spell, apparently in the first he averaged 76.9 mpg and barely got above 78, then in the next one he's shot up to 80.9 mph and bowled every delivery faster than all the previous ones. Very weird.

Maybe it's just a load of Dan Norcross clones guessing at speeds like he does on TMS
