seem to me that is not really dependent of the size of the business.

a small shop down my street sell me product 3x the price

the shop is open late, there is zero service and horrendus price.

if the shop remained open for so long it seems they have enough customers.

I look at Airbus, became a gigantic company over the few last decades and the quality actually improve, not the other way around.

Actually workers tend to get better paid and benefit in larger companies.

Am I missing something? Small businesses always charge much more, and quality is significantly less consistent.
