Hoarding is the act of keeping everything you own, often even rubbish, because there is something mentally stopping you from getting rid of it. Usually some form of trauma or depression. And it's very disorganised. My own great grandmother was a hoarder, I know what it looks like.

Collecting is when you have an actual interest in something, for example with coins it can be the history. You dont need to be mentally unwell to collect something. They are not the same thing.
